Value that can be extracted by reordering, inserting, or censoring transactions within a block.

MEV includes arbitrage, liquidations, and sandwich attacks. Block producers (miners/validators) can extract MEV directly or sell block space to searchers. MEV is both a cost to users (sandwich attacks) and a revenue source (it's partially why validators are profitable). MEV-aware protocols try to minimize harmful extraction.
